Recipe: Weightwatchers seafood paella

Recipe adapted from Weightwatchers

Ingredients:
1 Teaspoon of oil
8 medallions of low fat bacon
1 onion
2 teaspoons of garlic
1 red pepper
1 teaspoon of paprika
300g of paella rice
100m of white wine
900ml of hot chicken stock
100g of frozen peas
300g of fish pie mix
300g frozen mussels

The orginal recipe using mixed seafood but we brought fish pie for a change and added the mussels in.

I'd say my version works out 10 propoints per serving

Takes 45 minutes 001. Finely chop the onion, bacon and red pepper - don't forget to de-seed the pepper!
002. Pop a teaspoon of oil in the pan and add the bacon. Cook it for five minutes- keeps stirring so it doesn't stick to the pan. Then add the onion, pepper and garlic, stir for another five minutes.
003. Add the paprika and rice. Cook and stir the dish for two minutes and then add the wine. Make sure you keep stirring and cook for another two minutes.
004. Add the stock and stir it all in. Let the dish simmer for 15 minutes, occasionally stirring.
005. Chop the seafood into bite size chunks. You can miss this step out of you choose to get a seafood mix instead of a fish pie mix.

006. Add the peas into the mix and simmer for another five minutes. 007. Add all the seafood and carry on stirring for two to three minutes until the seafood is warmed all the way through. Bon Appetit! We had ours with mini Weightwatchers garlic baguettes to help fill us up. But to be honest you don't need them! This was so filling and just the right amount of stodge. It didn't feel "healthy" at all. I'm going to try and attempt a chicken and chorizo paella next time. I love stodgy rice dishes!

A Snapshot #10

001: Well I ate a lot of food this week. What weightwatchers? I was too busy out enjoying myself to point watch, something i'm sure to regret come tomorrow's weigh in... I attempted my first homemade lasagne tonight. It was lovely even if I do say so myself! It was a weightwatchers recipe so I used pork mince instead of beef. It was a really nice change.

002. I spent Saturday night round a friends house watching a film and stuffing myself on pizza. Perfect Saturday night in! Not bad for £3 eh?

003. I brought a money tin today to start seriously saving for my Mulberry bag. Unsure if I should save for a Lily (its one of the least expensive) or a Bayswater (my dream bag). Ideally I would like both though! I am going to put in at least £5 a week, it's not a lot but it's a start!

004. Nomnomnom! Nachos are my absolute favourite, I could seriously eat them for breakfast, lunch and dinner! Met my best friend for a pub lunch this weekend for a much needed catch up!

005 - 006. Is there anywhere better place to eat other than TGI Fridays? I tried to be good and eat a dish that was one of the lowest points so went for vegetable fajitas but fell off the wagon with this shared starter. It was so good though!

I featured the Topshop version of this dress in my wishlist post and after seeing Gem in it at LDN Lunch, it made me want it even more. However after Sarah let me in on a secret that they did an identical version in Primark so I made it my mission to hunt it down! The Topshop one is softer material, slightly longer and more of a grey marl colour but for a tenner i'll make do with this Primark number. It also came with a belt. Double whammy! I do really want the Topshop version in the the navy now. Anyone else like buying something they love in all the different colours it comes in? This jacket is years old, it was one of those irresponsible purchases when I was at Sixth Form and i'd spend every last penny on clothes. I think I was left with about 30p in my account for about 3 weeks after this... I have gotten better now I leave at least a £1 in my bank account! It's rubbish being a grown up where all my money goes on commuting and I hardly ever have enough money to treat myself.

Busy day planned today. Off to meet my best friend for lunch in our local pub with a few glasses of wine thrown in. Then we are both off to out friends house tonight for a night of dvds, pizza and more wine. Needlessly to say I am off weightwatchers for today. Not looking forward to the weigh in on Monday.. But to be honest could a Saturday be any better?
